The Salt Department was set up by Joshua Leaver (age 12) with his mother, in order to create delicious flavoured salts and associated products. They only use the finest sea salt and the best seasonal, and/or local ingredients. All the salts are infused with fresh ingredients by hand, and dried slowly to ensure the integrity of the salt flakes and flavour of the fresh ingredients.
