The MATOCQ cheese dairy was born in 1950 when Jean MATOCQ built the first slaughterhouses in his Béarn farm.
Carefully selected, MATOCQ cheeses, dairy or farm, are made from sheep's milk, cows or goats and are matured in the small cellars of the MATOCQ cheese dairy according to the Basque pastoral tradition of Bearn.
This ripening tradition, combined with manual care, thus reveals all the character and richness of the taste of MATOCQ cheeses.
