We raise our cows and goats in a style called "mountain dairy farming", where the animals are allowed to graze naturally in the mountains. Our goat and cow cheeses are made from the bounty of the mountains: fresh shoots and bamboo shoots in spring, green grass in summer, chestnuts in autumn and bamboo grass in winter. All of our goat and cow cheeses are made with a little bit of nature's bounty from our precious livestock.
