The flow of the Carlingford Lough’s grade-A waters helps to shape each oyster grown in it into a perfect tear-drop shape with a strong shell and a smooth, pearly white enamel. This fjord in north eastern Ireland also gives these oysters a soft, plump texture and a crisp, mineral-rich taste that evolves from sweet to mildly metallic. Best enjoyed fresh and raw.
