Achill Oysters #3

These rock oysters from Ireland’s Achill Island are fresh and salty with hints of the peat in the surrounding landscape. This straight-from-the-ocean taste is rounded off by a sweet cucumber-like finish and a whisper of mineral tang.

Serve them chilled in the half shell, with a dash of tabasco sauce, and accompanied by a glass of white wine.
