Only fresh, quality ingredients go into this traditional Caribbean fruit cake, made in South London with minced dried fruit, soaked in rum and fortified wine. 

The end result is bold and brave with an intense booziness and a dark, treacly flavour that harmonises perfectly with a cup of tea or a glass of rum.
