It started on my rooftop nearly 10 years ago as an experemnt where we wanted to understand more about smoking pickling and wild fermentaion. we belive that smoking is an imoprtant conection to our past however we strive to smoke with mordern needs where long conservation isnt the goal. flavore is. we cure and smoke to bring the best out of a product, not to make it last as long as possable.
