Capriz dairy is an Italian producer of artisan soft, semi-hard and hard cheeses made from local cow's or goat's milk. The cheeses are made in the Italian Val Pusteria valley in the Italian Dolomites. They are matured directly in the show dairy or in a bunker (cave) from the interwar period. In this caverna there is a constant temperature of around 10° C and almost 100% humidity all year round. This ideal environment results in a fascinatingly creamy cheese texture that is recognised worldwide.
