Palo Santo has been making traditional cheeses for more than 50 years. A symbol of tradition and artisan production is Palo Santo, our most emblematic cheese whose production dates back to the 18th century in the Monastery of San Bieito de Pereira, in Galicia, Spain. Benedictine monks used a 'Palo Santo' to remove the curd from cow's milk, making a semi-cured cheese that would become a true symbol of the Camino de Santiago.
