Il Carro was founded in 2015 by the D’Ambruoso family in Putignano, in the heart of Puglia’s Valle d’Itria. Dedicated to high-quality goat cheeses, the company manages an integrated short supply chain, from raising its own goats to milk production and cheesemaking. Its range combines traditional Puglian craftsmanship with innovation and includes fresh and aged cheeses, some matured in a natural karst cave beneath the farm.
