New Forest Fruit has embraced innovative pulsing technology to create a delicious and nutritious snack from strawberries that are grown on its farm. The process of pulsing splits the cells of the strawberry, resulting 
in a meringue-like texture when the berries are freeze­dried. The idea for the 100% fruit snack evolved from CEO Sandy's desire to use 'second class' strawberries for something other than jam processing.
