Fruit Cake

This is traditional English fruit cake as it should be, bursting with fruit and alcohol-imbued cherries, plus the warming addition of crystallised ginger. The recipe is unique to Malton Relish and was created during lockdown by the North Yorkshire deli's owner, Sophie Legard. This luscious cake can be sliced and served with a cup of tea year-round or iced and decorated for Christmas.
