This small batch, aperitif-inspired non-alcoholic drink is made by infusing bittersweet, herbal and citrus botanicals into a fermented apple base for several weeks before it is balanced out with wildflower honey. Serve it over ice with soda water and a wedge of orange. It also makes a great base for something more alcoholic. 

Striking a balance between the characteristics of cottage cheese and stringy Stracciatella, this is a naturally plant-based soy product. Its fresh, rich, creamy curds offer a tangy taste profile, making it perfect for topping salads, pizzas or pasta dishes. 

But this versatile spread has a depth of flavour that can be appreciated on its own too.
